Henri Boulard was a [[French]] scientist and [[microbiologist]] who discovered the yeast [[Saccharomyces boulardii|saccharomyces boulardii]] in 1923. He noticed people chewing on the skins of lychees and mangosteens to treat [[diarrhea]] during a [[cholera]] epidemic.
